Just need to go back and change some settings on both printers. Not sure what went sideways that caused this to begin with (on two different machines no less!) and doing the hardware reset is a "last-resort" type solution, but it worked for me this time. Did the same thing on the 2nd 8570 and it's doing the 2-sided printing again too.

The other PC had its existing driver and that ALSO printed two-sided. I uninstalled/reinstalled the printer & driver from one of the PCs and tried a 2-sided word doc and that printed on two sides also.
Voila! The internal "Print a 2-Sided Demonstration From the Control Panel" printed on both sides. Then I set the printer to 2-sided long-edge from the front panel. Thanks for the link CherlyO! I tried every one of the solutions listed including even the internal "Print a 2-Sided Demonstration From the Control Panel" and NONE of the settings fixed the issue - still printing one side only.
